Kobbari vundalu

Kobbari vundalu or coconut laddus were one of my favorites. I still remember my dad used to prepare these easy to make laddus when we were kids. So this time when I went home . I experimented and made lots of stuff. I baked a cake, made pizzas ,made rava laddus and then I tried making kobbari laddus. Hope you will like it as much as I loved it .. Here is the recipe.



Ingredients:

1 cup - fresh grated Coconut
1 cup - grated Jaggery (Grate the jaggery into small pieces)
3 spoons - ghee
4- Elaichi
Preparation:

Fry coconut to medium brown with a spoonful of ghee.


Heat grated jaggery with a spoonful of water in a heavy bottom vessel on medium heat.

When jagger starts melting,add coconut to the jaggery syrup

let coconut cook well in the jaggery syrup. Stir continuously.

Cook until the mixture comes close/thick.

Add Elaichi powder

My Rava ladoos


My sister was having sweets festival at her work place. I really motivated me to make something which I always loved. Rava Ladoo is Andhra's famous delicacies. This is my first attempt. I like my ladoos little soft so I have added little extra milk .

Happy Diwali

Ingredients:

1 cup - rava / semolina
1 cup - sugar
4 table spoons - ghee
1 cup - grated fresh coconut
25 ml - milk
10 whole nuts - cashew nuts
10- Badam
10 - raisins
a pinch - cardamom powder

How to prepare

Heat 2 tsp of ghee in a pan.
Once the ghee is hot enough, simmer the flame and roast cashew nuts and raisins.
Once the raisins balloon up, remove. Then roast the grated coconut.
Remove once done. Keep all these aside.
Add the remaining ghee and roast the Rava till its well roasted and aroma starts coming out.
In a bowl, take all the roasted Rava, Nuts, Coconut and add the Cardamom powder. Then add the sugar. Mix well.
Then slowly add the warm milk into the bowl. Check if you are able to gather as balls.
When you find that milk added is enough to get you laddoos, transfer it back to the kadai and cook in sim for 2 mins.
Mix well and then cover it and let it rest for 2 mins.
Then immediately make balls or laddoos.

Mom says I need a break

Recently I was on the phone with MOM . Usual daily chat... We are talking as usual for a long time then my Mom said that I never heard her saying ....... "she needed a BREAK".

All my life I have taken break almost every year sometimes even after 6 months once. I heard it from my sisters, my brother and even my Dad sometimes. But this is the First time she said something like this. And I was actually surprised to hear it.


My mom was the only daughter in her family she was pampered and was treated as a princess. But life took a unexpected turn when her father passed away.With in an year when she was 21 she got married and with in 17 days of her marriage her mom passed away and by the end of her first year of her marriage she even gave birth to her first born.. Life had been quite busy for her giving birth to 4 kids and working in a government sector no not as a teacher but in an office in a responsible position where they hardly have any leaves except for 12 public holidays . She was always busy juggling between work and family. She was successful in maintaining a perfect balance.

She was always there with her remedies even for our small fights at school to our difficult problems at work. When ever there is or was a problem we always turn to her.Sometimes it would from 1 of us and sometimes all five of us have problems at the same time and she being a perfect mom and wife would give solution or give us a shoulder to cry, or kneel before God crying and pleading for us. I sometime wonder how does she take so much pain . where does she get all that strength to carry on. And never get tried . May be thats why they call Mother is another form of God like the saying "God could not be everywhere and therefore He made Mom's is so true.When I heard her saying that she wanted a break I decided to give her the much needed break she deserves. So I asked her to come and stay with us at Chennai for a week.

As planned she came along with her came my Dad and brother . So I had little extra work to do. But it was ok. After all these years of toil I planned to give her a perfect break. First day was ok. but from second day my mom slowly started helping me. Initially it was cutting vegetables. And on the third day she started cooking, now cleaning vessels.Still I tried keeping her away from work and Just then I thought I have completed all household work like cleaning and cooking and sit down to relax I ll find my mom doing some new chores . Oh God!!! She is restless I thought.. But later did I realize that MOM's are so used to taking care of us that even when their body gives up, still there heart wants to do something or the other for her loved ones. Oh Mom!!! I love you for what you are and I hope in future your daughters will also be as loving mothers as you are..

My Very Famous Paneer Curry!!!

My Paneer Curry !!! My claim to fame!! Yes true.. Im not exaggerating gals.. May be a little :P
This curry actually has placed me on the map of good cook list of my sisters office. She organizes these pot luck and its an instant hit among her trainee's and colleagues. 2 years ago I was organizing a birthday party for my little sister. I was out all day with my friend trying to help her with her wedding preparations .Its was march , Sun was with all its might, sizzling hot . when I reached home it was 5 :30pm and with a bad bad head ache and guest were coming at 8:00pm. I still had to get cold drinks, snacks, ice cream and all the other groceries for dinner.When the Menu was chicken curry, chicken fry, prawns fry, raitha, Peas pullav and chicken biryani (by the way chicken biryani was from outside. I didn't have much time to cook). Then my sister informed that one of the guest was eating only veg . I didn't have much of an option but to cook something quick. Thats when this real quick curry emerged. Guess what not only they liked it. One of the guest called up the next for the recipe . Now thats a huge compliment don't you think???

From then on this paneer curry was always on request list. Thought you can make use of it.

so here is the recipe.

Ingredients:

Paneer:200 gms cut into small equal cubes
Onions: 3 numbers
Tomatoes:3 numbers
Green chillies :4 numbers
Ginger garlic paste: 1 Tea spoon
coriander powder :1 Table spoon
Red chilly powder : 1 Tea spoon
Gram Masala : 1 Tea Spoon
Coriander Leaves : 1 table spoon
Oil : 3 Table spoons.
Salt : as per your taste
Cut onions into big portions. Pour a table spoon oil in a pan add onions , tomatoes and green chillies and close the lid. Once all the vegetables softens. take it off the stove and Cool it for some time. after which make it into a smooth paste of all the 3 ingredients .

Pour two table spoons oil in a pan . Pour the onion , tomatoes and green chillies paste into the pan . Add salt, ginger garlic paste, coriander powder, garam masala and stir it well. Later add paneer and chilly powder. let it cook for 5 mins. Garnish with coriander leaves. Your paneer is already to serve.. And don't forget to add the important ingredient loads and loads of love :)

Tastes good with any kind of rice and roti's.

Paneer tikki receipe

Warning for people who are gonna try it. Its high on calories, however tastes yummy :D

Ingredients


1 Full Cottage cheese crumbled
guess it is 200 gms
Potatoes : 2 big ones boil it and mash it

Bread : 2 Slices
Onion: 1 Finely chopped
Green chillies : 2 again finely chopped
Cornflour : 2 table spoons
Coriander leaves : 2 table spoons Finely chopped
Oil : 2-3 table spoons oil to fry.

Salt for taste

Pepper: I don't prefer pepper. But you can add if you like it.

How to prepare:

Place the bread silces in water just enough and soak them for about a minute. Squeeze gently between palms of hand and throw away the excess water. Cut them into small pieces and keep them aside.

Mix the cottage cheese, potatoes, onions, green chillies, cornflour, chopped coriander leaves, bread pieces,salt and pepper (only if u require). And make small squares patties

Pour 2 teaspoons of oil in a pan and heat on medium level for about 2 minutes. Reduce flame to low. Place 4-5 patties on the pan and fry for 3 minutes on both sides till both they are golden brown. Fry the remaining patties in the same way.

Yayyyyyy yummy paneer tikki tayar and ready to eat .. :)

Serve immediately with Tomato Ketchup or with green chuttney. :D

Usually calling my parents was just to have a casual chat .Now a days when ever I receive a call from home its only bad news or worse news. Now don't think that we are facing all different kinds of troubles which we get to see in movies alone. Not really!!! God has been kind and merciful enough and these problems are the usual problems we face in life like health, job etc etc.

Like the famous quote says Fate chooses your relations, you choose your friends." I choose this friend of mine. Call it fate or destiny It was I who initiated our friendship. He was like water in the desert. Cause in this land of Tamil, I found someone who speaks Hindi (tappori Hindi of course). We met at Madras University while we were doing a course of Air ticketing. We clicked instantly cause he is a Greatest Admirer of Shahrukh Khan that’s a different issue that he thinks he looks like Shahrukh. In 3 days time we were like chuddy buddies. Our friendship is not like the usual one .We are different.

Straight from the kitchen part II

As decided to make this Saturday a tasty one. We finished having break fast. And then I started to worry about lunch.( Guess thats very typical right???) I opened my fridge its weekend obviously vegetables are rare to find. Lucky me I found baby corn and there was some paneer left out after my sister's pot luck. Decided will make use of both.

One of my friends told me to give out the recipe along with the photos. Before I proceed I've few confessions to make......I've never tried this in sense telling the recipe before and I'm not good with quantities and stuff.. What the hell ... let me try.

Alright! I'm not sure whether this kind of thing was ever made. May be this might be my invention. But one thing I can guarantee its tastes simply superb...

Ingredients:

Onions : 4 medium sized finely chopped

Tomatoes: 4 medium sized finely chopped

Green chillies: 2 finely chopped

Baby corn: 250 grams

Paneer- 50 grams

Oil-4 table spoons

Groundnuts powder:25 grams

Red chillies powder - 2 table spoon

mustard seeds : 1 small table spoon

Jeera :1 small table spoon

Ginger Garlic paste: 1 small table spoon

Garam masala : 1 small table spoon

Turmeric powder : 2 pinches (he he he sounds so unprofessional :D)

Salt : As per taste

Boil the baby corn for ten mins with a pinch of turmeric and a table spoon of salt for 10 mins. And cut them into medium sized pieces.

Fry ground nuts. Grind into powder.

Pour two table spoons oil , add mustard seeds and jeera. Add onions , fry them till golden brown add two table spoons salt and ginger garlic paste , add tomatoes and cook till tomatoes becomes soft and becomes juicy. Add ground nut powder and blend it well. keep stirring so that it becomes thick paste add little water to dilute the paste ,add Baby corn and cook it for two mins, add paneer and quickly add garam masala and Red chillie powder cook till it gets cooked for few mins. Garnish it with coriander (I was running out of coriander so) Now your Baby Corn and Paneer is ready to eat.

Serve it with Roti Garama Garam Roti's .But my sister prefers with rice.

Forgot to mention one most important ingredient - Add Loads and tons of love I bet recipe will be World's Best :)

Another Saturday

Saturday morning I usually get up late because I know that I don’t have to get up early and cook for my sister. When I got up from the bed I saw the day was gloomy and boring. I didn't even attempt to make the day brighter. Said a lil prayer, thanked God for a new day.

I decided to start my day. I dragged myself up to the main gate of my apartment to pick the news paper (Now don’t think I’m this girl who cant do without a newspaper I'll tell you a secret......not that I'm up to date with the current affairs and stuff just that the Saturday Gossip section from the honey bee is pretty good Shhhhh!!!) As I reached to the main gate I found that the paper is missing. I tried to look around, thought of spying a bit. (U know in India few people have a bad habit of taking theirs neighbors paper) Then I thought no may be its a holiday for the press. Disappointed went to the stove to make some coffee. Boiled milk, got the coffee mug and took a spoonful of Coffee powder and was searching for the sugar bottle, but to my horror it was empty! Sigh!!! .

Oh God!!! What a bad start. So I decided to go back to the comforting bed and bury myself and under the covers. As I reached bed and about to crash I found my sister coming from the wash complaining that she is sick. She got on to the bed and slept. For a while I tried to ignore that statement (I’m sick) and sleep. Lekin mere maan nahi maan raha tha. Cursing my heart I got up from the bed as I didn't have an option but to start the day, fix breakfast for my sister and give her some medicine.



Now I know all I need was a little charging means a good cup of
So with a very sleepy head and lazy bum I changed my nightwear got into tracks and Tee. I went to the mirror to check my hair guess what I found ???? Today's News paper (my sister picked it already and imagine what I was thinking Goddddd) News paper did bring a little enthusiasm (Very tiny miny one I say) which helped me walk up to the store and pick some sugar along with few eggs .

Walking back home I’ve already decided what to cook for the break fast. That little walk did help me to lose my laziness. After I reached home went straight up to the kitchen made myself a good cup of coffee . Looking outside the day looked as if its never gonna be bright. Just then I thought what if I cant change the weather but I can defiantly make this Saturday tasty.

With the same determination in my heart and mind I went to kitchen to make some yummy Bombay toast with lots of vanilla for my sis.. :D

What's playing on my Mobile



I was just lazing around in the house and guess what ... Off goes the power and you dont ve much to do..Power ( electricity) dictates almost everything in our lives. We are just left handicapped nothing much to do. Staring into the darkness (by the way its evening around 7) Hoping that...." power will come now" . In these situations when u have a company around we actually break into a conversation sometimes just complaining how ridiculous is this EB department. If the power cut crosses an hour . The first thing we do is call the toll free number and complain. Unfortunately I didnt have a company to chat. Yeah my mom did call me and gave company for sometime. Later I was all on my own...

I don’t want to make my readers cry :P ( I know there are not my readers ) but still!!! :) So I decided to delete few lines and started it again on a general note.

Phew!!!! These days I find people around me are very caring. Or way too jobless that they worry about me so much and always end up giving an advice which is almost similar to each other's just that the way they phrase it differs. Why are they so concerned??? Don’t jump into a conclusion I don’t have a deadly disease or may be I've one.

A little about myself

Im a Simple Girl ( Ok may be Im a woman now ) who is in her late 20's …who stays alone (technically with my sister) in a metropolitan city, who is independent who earns her own bread. Who is just like any other girl with lots of dreams and aspiration about her future... Like a perfect job , with a perfect husband and perfect life. She loves traveling, reading, Dressing up that means its obvious that She loves shopping a lot. ( to be precise she not only loves shopping for herself but she doesn't mind lending a helping hand or shop for any human being , all they have do to is Just Ask., and there She is all ready with her best and very good ideas and suggestions... if you have read those previous lines carefully there are two very important words you would ‘ve observed best and very good suggestions by now you should ve known that She is a very selfless person....after all every one needs BEST right??? (Now just wait dont jump into conclusion that Im beating my own drum.. I’ve people who can vouch for me.) Alright then she loves going out on fancy luncheon's and dinners, Chatting away to glory, Sharing her So called "Gyan" and "vishesh tippani" (valuable opinion)
